Dal Recipe always had its own scope in the world of cooking. It is the traditional food daily cooked in the villages of Punjab. At night, there will be no single house in the villages of Punjab where you will not find desi tadka dal. In countries like Pakistan and India, dal is the food of mediocre but it is equally found by the elites and well-known people because of their nutrients. However, mediocre eat it as the main food in lunch or dinner but elites enjoy it as a side dish

The people of Punjab think if there is no desi ghee it means dal is not delicious today.

The dal is never eaten alone, it is served with Roti and Chawal. Though dal chawal served with achar and raw onions is a youngster’s favourite street food.

If you ever found someone roaming here and there asking for dal at different restaurants, then make sure he is Punjabi. Recently, we had Bakra Eid (the festival where Muslims sacrifices animals (goats, cows and camels) for Allah) on the third day of Eid my husband asked me,

What you have cooked today?” I told him proudly “Today I have cooked seekh Kababs, mutton biryani and tikka boti.” I continued and asked, “what else do you want to eat?” He said innocently, “Dal Chawal hain tou da do?” which means “Give me lentil and rice”. Shocked? Then don’t be because he is Punjabi.

Different Varieties and Types of Dal

Dal is an Urdu and Hindi word. In English, dal is called lentil and pulses. Dal has many varieties and types and their accent is also different in different reigns. The common type of Dal (lentil) used for cooking in Pakistan and India are Moong dal, Mash Dal, Masoor Dal, Rawa Dal, Channa Dal, Lobia, Laal Lobia and Maa ki Dal.

Benefits of Dal (Lentils and Pulses)

Dal is a super blessed food with a lot of nutrients and multivitamins. It is filled with protein, calcium, magnesium, Vitamin B6 and iron. Because of its soft and creamy texture, it is advisable to give dal to babies at 8 months.

Dal is light and easily digestible food. Therefore, Khichdi (made of rice and lentil) is always cooked for any type of patience. The dal which is added in khichdi is mong dal, the highest source of protein. Mong dal is the queen of all other dalain (lentils).

The people who strive to lose weight eat dal without tadka (tempering). You can easily lose weight if you daily consume dal soup at night after exercise. Dal like Masoor ki dal is also a beauty regime. It helps to glow the complexion because of its special nutrients. However, I will never suggest you eat channa dal at night if you have gas issues.

Lentils (Dalain) are a great source of protein. They also work like folic acid supplements during pregnancy. During pregnancy, I will suggest you enjoy dalain (lentils and pulses) but moderately. However, Urad dal is not safe to consume during pregnancy because of its high intensity and results in uric acid.

Wait, Have I told you that dal is also cooked daily in my house? If no, then yes, I am Punjabi and very much fond of different types of dal.

Casual Indian Lentil Curry/Dal Recipe

This recipe of dal is very casual and simple cooked in every house of villages of Punjab with only a few ingredients.


  • Dal (Mong, Masoor, or Channa choose one) 1 cupDesi Ghee 5tbsp
  • Onion 1 big size (sliced)
  • Tomato 1 big size (sliced)
  • Ginger paste 1tsp
  • Garlic paste 1tbsp
  • Fresh Green Chillies 3-4
  • Hot Spices 1tbsp
  • Dry Coriander Powder 1tsp
  • Turmeric Powder 1tsp
  • Red Chilli Powder 1tbsp
  • Salt as per your taste

Cooking Method

Step 1 Boil the Dal (Lentil)

Before boiling dal, always clean, wash and soak it for almost half an hour.
Now in a pan bring water to a boil and add dal.
I am adding Mong dal (yellow lentil) so it will take 15-20 minutes to boil.
Once the dal is boil keep it aside and prepare the tadka.

Step 2 The Procedure of Dal Recipe for Tadka

In a frying pan, add desi ghee and melt it.
Now add onions, ginger and garlic paste and sauté for 2 minutes.
After that add tomatoes and all the other ingredients and cook until tomatoes convert into a puree.
The enchanting aroma is a signal that your tadka is ready.
Mix it in the boil mong dal and transfer it into a serving bowl.
The people of villages usually eat this lentil curry with roti at dinner.

Dal with Zeera Chawal Restaurant Style Recipe

Ingredients for Chawal

  • Basmati Rice 2 glasses (soaked for 1 hour)
  • Cooking Oil 1 cup
  • Cinnamon 1 stick
  • Cumin Seeds 2tbsp
  • Cloves 5-7
  • Fresh Green Chillies 3-4
  • Salt up to you
  • Water 3 glasses

Preparation of Zeera Chawal (Cumin Rice)

  1. Take a deep saucepan, add cooking oil and heat it.
  2. Now add cinnamon stick, cumin seeds, cloves, fresh green chilies, salt and cook for 2 minutes.
  3. Now add three glasses of water and bring to a boil.
  4. When water starts boiling add rice and cover for 30 minutes on medium flame.
  5. After 30 minutes, all the water would be soaked and the rice will be ready to serve.
  6. Transfer the rice into a serving pot and garnish it with fresh coriander and mint leaves.

Ingredients for Dal Recipe (Lentil)

  • Moong Dal (Yellow Lentil) 1 cup soaked for 1 hour
  • Masoor Dal (Orange Lentil) 1 cup soaked for 1 hour
  • Turmeric powder 1tbsp
  • Red Chilli Powder 1tbsp
  • Salt 1tsp
  • Ginger and Garlic Paste 2tbsp
  • Hot Spices 1tsp
  • Tomato 1 sliced
  • Fresh Coriander Leaves A handful (chopped)
  • Fresh Green Chillies 3
  • Cumin 1tsp
  • Raw Red Chillies 4-5
  • Water 1-2 glasses
  • Cooking Oil/ Desi Ghee 1 cup

Preparation of Dal/ Lentil Curry

Boiling Procedure of Dal

  1. In a deep saucepan, add masoor dal, mong dal, water and brings to boil.
  2. Now add turmeric powder, red chili powder, ginger and garlic paste, tomato and cover it on a medium flame for half an hour.

Prepare the Dal Tadka (Tempering)

  1. When your dal is almost boiled. Prepare the tempering or tadka on the other side.
  2. In a frying pan, heat the oil, add ginger and garlic paste, fresh green chilies, raw red chillies, cumin seeds and hot spices and saute for two minutes.
  3. When the aroma of oil and all other spices start, close the stove and carefully add this tadka into a boiling dal pan.
  4. Mix it well and transfer it into a serving bowl.
  5. Your restaurant-style dal zeera Chawal is ready to eat. Serve it with mango pickle and salad.

Shahi Channa Dal Recipe with Ginger Garlic Tadka

Shahi Channa Dal is one of the delicious dishes. If it is cooked perfectly it tastes like a chicken mince. The secret to cooking the perfect channa dal is always to purchase good quality dal. Always soak it in lukewarm water for a minimum of two hours.

  • Channa Dal half cup
  • Masoor Dal half cup
  • Mong Dal half cup
  • Mash Dal half cup
  • Cooking Oil 2 cups
  • Onions 2 medium-sized sliced
  • Tomato 2 medium-sized chopped
  • Dry Coriander Powder 1tsp
  • Turmeric Powder 1tsp
  • Red Chilli Powder 1tbsp
  • Chicken Cubes 2 slices
  • Ginger paste 1tbsp
  • Fresh Green Chillies 3
  • Raw Red Chillies 3-4
  • Red Chilli Flakes half tsp
  • Cumin Seeds 1tsp
  • Salt 1tsp
  • Lukewarm Water 1 glass

Cooking Procedure

Step 1

First of all, mix all the three lentils and soak them for 1 hour.
After 1 hour, strain the water from the lentils and wash them.
Take a deep saucepan, heat cooking oil and add onions. Sautee them till turn into light golden brown.
Now add tomatoes, turmeric powder, red chili powder and dry coriander powder. Sautee them for 2 minutes and wait for the tomatoes to meltdown. You can also add water if you feel that spices are burning.
Now add lukewarm water and all three mix lentils.
Also add two chicken cubes, salt and mix well.
Cover the pan and wait for half an hour.

Step 2 Prepare the Aromatic Dal Tadka

In a frying pan heat the oil.
Now add cumin seeds, fresh green chillies, raw red chillies and red chili flakes.
Cook them well.
Add this refreshing aromatic tadka to the boil dal pan.
Mix them well and cook for 2 minutes.
Now transfer this shahi dal to a serving bowl and garnish it with lemons and fresh coriander leaves.

Delicious Makhni Dal Recipe

Ingredients to Prepare the  Dal

  • Daal Mash (unpeeled) half kg soak for 4 hours
  • Laal Lobia (Red Beans) a handful (soak for 4 hours)
  • Fresh Green Chillies 3-4
  • Ginger cut into long small pieces 9-10
  • Salt 1tsp
  • Bay leaves 2-3
  • Fennel Seeds 1tsp
  • Cardamom 3-4
  • Water 1 glass

Cooking Procedure

  1. Add lentils, fresh green chillies, ginger, salt, bay leaves, fennel seeds, cardamom, and water in a pressure cooker.
  2. Cover the cooker and let it wrestle for 6-7 minutes.

Prepare the Tadka (Tempering)


  • Garlic 6 pieces
  • Onion 1 small size (cut into big pieces)
  • Tomatoes 3 medium size (cut into big pieces)
  • Paprika Powder 1tbsp
  • Turmeric Powder ¼ tsp
  • Red Chilli Powder 1tsp
  • Dry Coriander Powder 1tbsp
  • Cooking Oil 1 cup
  • Butter 50g
  • Milk Cream 3tbsp
  • Hot spices half tsp

Cooking Method

Step 1

Blend all three ingredients (garlic, onion, tomato) in a shaker.
Now in a deep fry pan, heat oil and add the mixture.
Stir-fry this mixture in oil for 3-5 minutes. Also, add all the other spices and sauté for few minutes.
Now add the boil dal (lentil) to this fry pan and mix well. Also, add half a glass of water.
Cook for 5 minutes on medium-low flame and cover it.

Step 2

Uncover the pan, now add butter and cook for one minute on medium-low flame.
After butter, add tetra pack cream and mix well. The flame should be low at this time.
Now add half a teaspoon of hot spices and cover the pan for just two minutes on steam flame.
Now put it in the serving bowl and garnish with cream and butter. Enjoy it with your family and eat with hot tandoori roti. This Makhni Dal dish is also suitable to serve your guests.

Indian Dal Fry Like Street Food/Dal Recipe

I know, now you are looking for an instant and easy recipe for dal (lentil). Therefore, keeping in mind your routine I have this quick recipe of dal with simple ingredients.


  • Dal Moong (Yellow lentil) 1 cup
  • Onion 1 sliced
  • Tomato paste 1tbsp
  • Ginger and garlic paste 1tbsp
  • Fresh Green Chillies 2-3
  • Turmeric Powder 1tsp
  • Red Chilli Powder 1tbsp
  • Hot spices 1tsp
  • Dry Coriander Powder 1tsp
  • Fresh Green Coriander handful chopped
  • Desi Ghee 3tbsp

Cooking Method

Step 1

(Keep in mind, the basic secret of this recipe is overnight soaked dal. Therefore, if you plan to cook dal, the next day then soak it in the normal water for the entire night or a minimum of ten hours).

Step 2

In a deep pan, heat the desi ghee and add onions, ginger, garlic paste and sauté for 2 minutes on high flame.
Now add tomatoes and all the other ingredients and spices and cook for 2 minutes. Also, add half a cup of water.

Step 2

After two minutes, you will see the ingredients have been turned into a puree form now add soaked dal.
Cook this dal for 20 minutes and also add water (half cup) if needed.
This is an instant recipe of dal also called dal fry.

Special Indian Methi Dal Recipe

Methi is a green herb also known as fenugreek. It has a special aroma, taste and benefits. It is mostly cooked with other vegetables like aloo methi, methi palak and methi saag. Methi brings a pleasant colour and taste in the dal (lentil). Thus just follow any of the recipes above and add one more secret ingredient that is Methi.
Just add a handful of methi (fenugreek) at the time of dal tempering (tadka) in the dal.

Frozen Dal and Lentils for Dal Recipes

Can we freeze the dal (lentils)? Is a common question that arises in our mind when we think to boil dal daily is a tough job.
Then don’t worry, you can easily boil and freeze the dal in the refrigerator for more than a month. Simply boil the required amount of dal without adding any other ingredient. Cool it and store it in an airtight glass container. Keep it in the refrigerator. At the time of cooking, just take the desired amount.

Dal Recipe of Soup for Weight Loss

The dal soup is very healthy and effective to lose weight. You can easily make it and consume it daily or on alternate days.


  • Moong Dal 1 cup
  • Onion 1 small size
  • Tomato 1 small size
  • Garlic 2 chopped
  • Cumin Seeds 1tsp
  • Fennel Seeds ½ tsp
  • Black Pepper 1tsp
  • Chat Masala 1tsp
  • Mint leaves 5-7
  • Lemon 1 full

Cooking Procedure

  1. Take two glasses of water and bring to boil.
    Now add onion and let them boil for two minutes on high flame.
    Now add dal and boil for half an hour. You can add more water.
    During this process also add all the other ingredients and spices.
  2. Serve this soup in a bowl. Garnish with mint leaves. Add lemon and chat masala to make it delicious. Relish it daily it has no harm.

Points to Remember

Never compromise on the quality of lentils and pulses.
Always clean the dal before washing because in dal very small amount of stones are found.
If these stones are ignored, they cause kidney stones.
Always soak dal or lentils in lukewarm water.
Never burn your spices at tempering (tadka).

Always try to eat the fresh dal. Don’t freeze the cooked dal for more than one day.
If you are a pregnant and lactating mother then don’t take dal at night time.
Lentils may cause bloating.
Fennel seeds help to reduce bloating.
Lentils are full of nutrients always try to include them in your diet.
