Ingredients

  • Mutton Mince 1kg
  • Onion 1 sliced
  • Tomato 1 chopped
  • Cooking Oil 2tbsp
  • Lemon Juice half cup

  • Sumac (Arabic spice) 1tbsp
  • Paprika 1tsp
  • Black Pepper 1tbsp

Marinating and Cooking Method

Step 1

In a chopper, add onion, tomato, garlic, fresh coriander powder and mutton mince.

Mix for 2 minutes.

Now convert the mixture into a tray and spread it. Cover it and keep it in the refrigerator for 1 hour.

Step 2

Now attach that mince with the skewer rod in a long shape.

Press the edges with your fingers to lock the kebab with the rod.

  • Onion 1 sliced
  • Cooking Oil half cup
  • Mint leaves 10-12 chopped
  • Lime juice half cup
  • Salt as per taste
  • Red Pepper chopped
  • Oregano 1tbsp

Marinating and the Cooking Method

Step 1

Take a deep bowl, add all the ingredients and the spices together.

Now cover it and place it in the refrigerator overnight.

Step 2

The next day, burn the skewer.

Put all diced meat on the skewer iron roads and place on the skewer to cook and steam.

When both sides are cooked fully and the kebab has changed its colour.

Pakistani Recipes of KEEMA KEBAB

Shami KEBAB

This is one of the easiest and instant methods to make Shami Kebab.

Ingredients

  • Chicken 1 kg
  • Potato half Kg
  • Split Chickpea Pulses (Channa dal) half kg
  • Onion 1 colossal size (sliced)
  • Garlic Cloves 15-20
  • Fresh Coriander leaves A bunch
  • Fresh Green Chillies 5
  • Salt to taste
  • Hot spices 2tbsp
  • Red Chilli flakes 2tbsp
  • Black Pepper 2tbsp
  • Water 2 glasses
  • Cooking Oil 1 cup
  • Eggs 2

Making and Cooking Method

Step 1

In a pressure cooker, add boneless chicken, peeled potatoes and overnight soaked chickpea lentil or pulse.

Now add sliced onions, garlic cloves, hot spices, dry coriander powder and red chilli flakes.

Also, add 2 glasses of water. Cover the cooker and let this material cook on a high flame for 20 minutes.

When the cooker whistles, uncover it carefully and transfer the material to a deep bowl to cool down.

Step 2

In a chopper or food processer, add the boiled mixture, black pepper, fresh green chillies and fresh coriander leaves.

Now start the chopper and mix the material for 5 minutes or until your desired consistency.

After the mixture becomes a paste, take a handful of the mixture and make a ball.

Press the ball in between the palms of your hands and it will form a circle-shaped Shami KEBAB.

Now make all the other shami kebabs following the same procedure. I make 50-60 shami kebab from this quantity of ingredients.

Step 3

Beat two eggs in a bowl and dip the shami kebab in an egg from both sides

Heat the pan, add cooking oil and fry shami kebabs in the pan.

You can fry the shami kebab according to the capacity of your frying pan.

Fry your required shami kebabs and freeze the remaining uncooked in the refrigerator.

Gola KEBAB

Ingredients

  • Chicken or Beef Mince 1kg
  • Raw Papaya Paste 1tbsp
  • Ginger Paste 1tsp
  • Garlic Paste 1tbsp
  • Green Chillies Paste 1tbsp
  • Hot Spices 1tbsp
  • Salt to taste
  • Food Colour (optional) 1tsp
  • Red Chilli Powder 1tbsp
  • Onion 1 medium size (fried)

Cooking Method

Step 1

Grind all the materials and the spices together in a mixer.

When the mixed material comes to your desired consistency, then stop the mixer.

Now grease your hands with water and take a handful of mixture.

Make an oval-shaped ball and put that in the stick (skewer rod).

Repeat the same process and make as many balls as you can.

You can also insert two to three oval-shaped balls in a single rod.

Step 2

Grease the frying or grill pan with oil and place rods on it.

Cook from both sides. When your kebabs change colours, it means your Gola Kebabs are ready.

Serve it hot with rice, salad or bread. You can also make gravy of it to be served with roti at lunchtime.

Method of Gola Kebab Gravy

Ingredients for a Gravy

  • Onion 1 small size (sliced)
  • Tomato 1 (chopped)
  • Tomato Sauce (optional) half cup
  • Green Chillies 2 (cut into two parts)
  • Fresh Green Parsley A handful (chopped)
  • Cream 1 cup
  • Ginger and Garlic Paste 1tbsp
  • Salt to taste
  • Red Chilli Flakes 1tsp
  • Turmeric Powder 1tsp
  • Black Pepper 1tbsp
  • Vegetable Oil 2tbsp

Cooking Method

Step 1

Take a deep saucepan and heat the oil.

Now add the crust of ginger and garlic. Also, put onions and saute for two minutes when onions become golden.

Add tomatoes and all the other spices and saute for one minute on medium to high flame.

Now add tomato and green chillies together. Also, add 1 ounce of water.

Step 2

When water comes to a boil, add already fried Gola Kebab and cover the pan for just one minute.

When you see the water has come to your required level, now add cream and slowly move the spoon.

Cook for two minutes and garnish with fresh coriander leaves.

The creamy Gola Kabab curry is ready to serve with the hot tandoori roti at mealtime.

Marinating and Cooking Method

Step 1

Wash mince and set it aside in a separate bowl.

Now take a blender and blend the onions once they get to paste form.

Strain the onion paste in a woollen cloth. The purpose is to remove the excess onion water from the paste.

Keep your dried onions in a separate bowl and add all the spices, ghee and cream in it.

Mix well all the ingredients with your hands.

Step 2

Now add beef mince to it too. Knead the entire mixture for five minutes.

Cover it and leave it for half an hour when you get the desired thickness or consistency in a mixture.

On the other side, burn the coals in a skewer.

Step 3

Make a mince bowl and apply it to the skewer rod. The size of the kebab should be large. Press both edges of the kebab mince with the rod. Make all the kebabs through this process.

Now place the rods on the skewer and keep rotating. Cook from both sides. Till the Kebabs change their colour.

Ingredients

  • Onions 2 (make a paste and strain excess water from the onion paste)
  • Fresh Green Chillies a bunch (make a paste)
  • Green Chillies 5 (make a paste)
  • Mutton Mince Half kg
  • Fat of Mutton Mince 30g
  • Cumin Powder 1tsp
  • Hot Spices 1tsp
  • Red Chilli Flakes 1tsp
  • Dry Coriander Powder 1tbsp
  • Pomegranate Dry Seeds 1tsp
  • Salt to taste
  • Ajwain 1tsp
  • Eggs 3
  • Corn Flour 1cup
  • Tomato 1 (remove the seeds and chop)
  • Cooking Oil 2cups

Cooking Method

Step 1

In a chopper, blend the mince and the fats for one minute.

Now add strained onion paste, green chillies paste, coriander paste, ginger, garlic paste and all the other spices and blend the material in the same chopper.

Transfer the mixed material to a deep serving bowl.

Add cornflour and beaten egg. Knead the mixture with full force for two minutes using your hands.

Also, add the chopped tomato and few drops of oil. Mix well.

Step 2

On the other side, heat the oil in a frying pan and fry two remaining eggs. Add these eggs in a scrambled form in that mixture.

Mix well the whole mixture and cover for 1-2 hours.

After a set time, heat the cooking oil in a frying pan.

Now grease your hands with plain water, take a handful of the mince mixture, and make a ball.

Step 3

On a flat plate, put that ball and press it with your palms. It will form a round or circular shape of Kebab. Press and spread it according to your desired size.

Now put that Chapli kebab in a frying hot pan and cook from both sides.

It will take 8-10 minutes to cook chapli kebab on medium to high flame.

Don’t change its position again and again, just change two times, after 4 minutes.

Though repeat the process and make all the chapli kebabs like this.

Ingredients

  • Chicken Steaks 2
  • Onion 1 sliced
  • Mustard Oil
  • Yoghurt 1cup

  • Poppy Seeds 1tbsp
  • Water 2tbsp
  • Ginger, Garlic paste 1tbsp
  • Salt to taste

Cooking Method

Step 1

First, marinate the chicken steaks adding salt and 1tbsp of mustard oil for half an hour. Keep aside.

Now heat oil in a frying pan and add sliced onions. Sauté for two minutes till the onions become soft.

Take a shaker, add yoghurt and saute onions in it and shake for one minute.

Now, in a marinated bowl of chicken steaks, add all the spices and mix well.

Also, add the mixture of onion and yoghurt. Mix well and leave for five minutes.

After five minutes, insert your chicken steaks into the rod or skewer sticks.

Step 2

Burn the skewer and place the marinated steaks rods on it. Cook from both sides.

Method of Cooking

Step 1

In a chopper or blender, add chicken mince and all the other ingredients together. Blend well for five minutes.

Now transfer the mixture to a deep bowl and knead the material with your hands. Cover it for 15-30 minutes.

Step 2

After 30 minutes, make a ball of your palm size and put it on a rod to make a kebab.

The size of the kebab should accord with your choice or according to the size of your pizza.

Preparation

Step 1

Take a bowl and mix all the above ingredients, including yeast. Mix them well together.

Knead with both your hands like we knead the flour to make a roti. Also, keep adding lukewarm water when needed.

Apply few drops of oil when it is all kneaded. Cover it and set it aside for two hours.

Step 2

Now make two parts of the dough. Keep one for the next use. Make a ball of the other part.

Roll the knead flour ball or dough in a round shape and spread it in a baking round pot of pizza.

Apply pizza sauce or tomato sauce with the help of a spoon all over the dough. Also, sprinkle a heavy amount grated of mozzarella cheese on it.

Now put Kebabs in a pizza slice shape. Again, sprinkle cheddar cheese or mozzarella cheese.

Put sliced onions, tomatoes and capsicum on it. Again, sprinkle cheddar cheese.
